Gluten Free Chocolate Crackle Cookie-Cakes Recipe

Makes about 20 cookies, more if you’re mean with the dough!
Ingredients
60g cocoa powder, sieved
200g caster sugar
60ml vegetable oil
1 tsp gluten free baking powder
70g icing sugar
Method
Heat the oven to 190C/170C fan. Line a baking tray with greaseproof paper.
In the bowl of a food mixer, mix the cocoa, caster sugar and oil together. Add the eggs one at a time, whisking until fully combined. You can do this by hand, but it’s hard work!
Add the flour and baking powder to the cocoa mixture, bit by bit, and mix on low speed until a soft dough forms.
If it feels very soft, transfer to the fridge and chill for 1 hr.
Sift the icing sugar onto a plate.
Form a heaped teaspoon of the dough into a ball, then roll in the sugar to coat, then put on the baking tray lined with baking parchment. Repeat with the remaining dough.
DO NOT squash the cookies down – they’ll settle in the oven on their own!
Bake in the centre of the oven for 10 mins.
Let them cool on the tray for a few minutes. Then lift onto a wire rack to finish cooling.
