Gluten Free Apple and Almond Cake Recipe

Makes: 12 large slices, if made in 10" pan, or 8 smaller slices for half quantity baked in a 7" shallower pan.
It freezex like a dream, whole or in individual slices.
This cake is best served slightly warm, though still good cold.
Ingredients
285g of cooled apple puree
8 large eggs
325 g ground almonds
275 g caster sugar
1 tablespoon lemon juice
50 g flaked almonds
Method
Preheat the oven to 180ºC/160ºC Fan
Grease and line oil a 25cm / 10 inch springform tin
1 Put the cooled puree in a food processor with the eggs, ground almonds, caster sugar and lemon juice and blitz to a puree.
2 Pour and scrape into the prepared tin, sprinkle the flaked almonds on top.
3 Bake for approx. 40 minutes. It's worth checking after 30 minutes, as ovens do vary! It may need a little longer.
4 Cool slightly on a wire rack, then spring open.
5 Dust lightly with icing sugar to serve.
